Southwest Pork Stew
2 tbls. olive oil
2 onions, chopped
1 bell pepper, seeded and chopped
2 lbs. pork tenderloin, cubed
3 cups chicken broth
2 large potatoes, peeled and cubed2 cups stewed tomatoes
1/2 tsp. chili powder
1 tsp. cumin
1 tbl. lime juice
Saute onion and bell pepper in oil for 5 minutes. Add pork and chicken broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes. Add potatoes and cook for 10-15 minutes more until potatoes are tender. Add tomatoes, chili power, cumin, lime juice and salt and pepper to taste. Serves 6. Enjoy!
